Seafood Bisque with Fish Stick Croutons

Hands-On Time: 15 minutes | Total Time: 20 minutes | Serves: 4

  • 1 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 Tbsp. all-purpose flour
  • 1/4 cup dry sherry
  • 2 cups seafood or chicken broth
  • 1 can (14.5 oz.) diced tomatoes
  • 2 slices white bread, torn into pieces
  • 1 Tbsp. finely chopped parsley (optional)


  1. Bake Crunchy Fish Sticks according to package directions; cut into bite-size pieces.
  2. Meanwhile, heat olive oil over medium-high heat in large saucepot and cook onion, stirring occasionally, 4 minutes or until starting to brown. Sprinkle with flour and cook, stirring constantly, 1 minute. Add sherry, broth, tomatoes and bread cubes; bring to a boil. Reduce heat to low and simmer 10 minutes. Process in blender or with immersion blender until smooth. Season to taste with salt and ground black pepper.
  3. To serve, evenly pour soup into 4 bowls, top with Fish Sticks and sprinkle with parsley.
