Fish Fillets in Broth with Avocado & Corn

Hands-On Time: 15 minutes | Total Time: 25 minutes | Serves: 4

  • 1 cup clam or seafood broth
  • 1 cup Birds Eye® Super Sweet Corn
  • 2 Tbsp. lime juice
  • 2 Tbsp. cilantro leaves
  • 1 avocado pitted, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 8 radishes, very thinly sliced


  1. Bake Crispy Fish Tenders according to package directions.
  2. Meanwhile, bring broth and corn to a boil over low heat in small saucepan. Simmer 3 minutes. Remove from heat and stir in lime juice and cilantro leaves. Season to taste with salt and freshly ground black pepper.
  3. Evenly arrange avocadoes, tomatoes and radishes in 4 serving bowls. Evenly top with broth mixture then fish tenders. Garnish with additional cilantro leaves.
