Crispy Fish Taco Salad

Hands-On Time: 10 minutes | Total Time: 25 minutes | Serves: 4


  • 8  
  • 1 Tbsp. olive oil
  • 2 cloves garlic, chopped
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 cup Birds Eye® Super Sweet Corn
  • 2 tomatoes, chopped
  • 1 Tbsp. lime juice
  • 1 tsp. cumin
  • 1 cup crushed corn chips
  • 2 cups chopped lettuce, such as Romaine or Iceberg
  • 1/4 cup shredded cheddar cheese


  1. Bake Crispy Fish Fillets according to package directions.
  2. Meanwhile, heat oil in nonstick skillet and cook garlic 30 seconds or until fragrant. Add beans, corn, tomatoes, lime juice and cumin. Cook, stirring occasionally, 2 minutes or until heated through. Season, if desired, with salt and ground black pepper. Stir in crushed chips.
  3. Arrange lettuce in bottom of 4 bowls or plates. Top with black bean mixture, prepared fish fillets and cheese.
