Penne & Salmon with Herbed Cream Sauce

Hands-On Time: 10 minutes | Total Time: 35 minutes | Serves: 2


  • 1 package  
  • 8 oz. penne pasta
  • 1 Tbsp. olive oil
  • ¼ cup finely chopped onion
  • 1 red or orange bell pepper, finely chopped
  • 1 clove garlic, finely chopped
  • 4 oz. cream cheese softened
  • 2 tsp. Italian seasoning*
  • 2 cups baby arugula or spinach leaves


  1. Bake Salmon according to package directions; cut into bite-size chunks.
  2. Meanwhile, cook penne according to package directions; reserve ¼ cup pasta water.
  3. Heat oil in large nonstick skillet over medium-high heat and cook onion and bell pepper, stirring occasionally, 3 minutes or until starting to brown. Add garlic and cream cheese and cook until cream cheese is melted.
  4. Add herbs and reserved pasta water. Toss in cooked penne and arugula and toss to coat. Add Salmon and serve. 
*Substitute: 2 tablespoons finely chopped parsley, oregano and/or basil leaves.
