Italian Cod Panini with Aioli (Lemon Garlic Mayo)

Hands-On Time: 10 minutes | Total Time: 30 minutes | Serves: 2


  • 1 Package Van de Kamp’s® or Mrs. Paul’s® Garlic Herb Cod
  • ¼ cup mayonnaise
  • 1 clove garlic, finely chopped
  • 2 tsp. lemon juice
  • 1/8 tsp. finely grated lemon peel
  • 1 package (8.8 oz.) Naan (2 flatbreads)
  • ¼ cup shredded Italian cheese blend
  • ¼ cup chopped roasted red pepper
  • 1 cup baby spinach leaves


  1. Bake Cod according to package directions; thinly slice.
  2. Blend mayonnaise, garlic, lemon juice and lemon peel in medium bowl.
  3. Spread 1 tablespoon mayonnaise mixture on Naan. Top with 2 tablespoons cheese, Cod, red pepper and spinach. Sprinkle with remaining cheese and top with second Naan, mayonnaise side down.
  4. Press in Panini maker according to manufacturer’s directions.*
  5. Cut in half and serve, if desired, with additional mayonnaise mixture.
    *Substitute a nonstick skillet for Panini maker. Cook over medium heat, pressing down slightly with spatula, turning once or until cheese is melted.
