Salmon & Spinach Sauté

Hands-On Time: 5 minutes | Total Time: 30 minutes | Serves: 2


  • 1 package  
  • 1 Tbsp. olive oil
  • ¼ cup finely chopped shallot
  • 1 cup cherry tomatoes, halved
  • 1 clove garlic, finely chopped
  • 1 bag (6 oz.) baby spinach leaves


  1. Bake Salmon according to package instructions.
  2. Heat oil over medium heat in large nonstick skillet and cook shallot, stirring occasionally, 1 minute or until softened. Add tomatoes and cook 2 minutes or until tomatoes start to break down. Add garlic and cook 30 seconds or until fragrant.
  3. Add spinach and cook, stirring, until just wilted. Season to taste with salt and ground black pepper.
  4. Divide spinach mixture between two plates and top with Salmon.
